Variety: Xarel lo 100%

Aging: 6 months in French oak barrels and 6 months in bottle.

Elaboration: Selection of grapes in the vineyard, hand-picked in 15 kg boxes and rested in a cold chamber for 24 hours. Soft pressing, separated from the flower must and naturally decanted. The clean must is fermented in extra fine French oak barrels and aging continues for 6 months, gently stirring the fine lees of the wine. Once bottled, the aging in the bottle continues with a minimum rest of 6 months in the cellar. Made in a natural way with the minimum necessary amount of sulfites.

Tasting notes: View: Bright, with a golden yellow color and a slight copper hue. Nose: First fine aroma of white flower of aromatic herbs (thyme and fennel). When shaking the glass, the aromas of tree fruit (pear, apple and peach) slowly emerge together with the “bouquet” of the aging process (candied fruits and smoked touches) adding more complexity. Mouth: Entry of the wine smooth and dry, marked and balanced acidity, a silky and round texture is noted on the palate. The aftertaste is long and persistent. The final sensation is of an elegant and sophisticated wine, with a strong terroir personality.

Variety: Ull de Llebre 100%

Aging: 3 months in French oak barrels.

Elaboration: Selection of grapes in the vineyard, hand-picked in 15 kg boxes and rested in a cold chamber for 24 hours. The grapes direct to the press, the color of the skin has been slightly extracted and the resulting flower must has been decanted by weight. The clean pink flower must is fermented in fine-grained French casks (previously used with white wine for three years) and aging is maintained for three months. It has been made naturally with the minimum necessary quality of sulfites.

Tasting notes: View: Bright, a pale pink color with copper tones. Nose: First fresh aromas of wild herbs (rosemary and thyme), when shaking the glass, the aromas of berries (red berries and blueberries) come out. Emphasizes the subtlety and aromatic elegance. Mouth: Smooth entry, marked and balanced acidity. The texture is silky, with a marked touch at the end of the mouth. The aftertaste is pleasant and fresh. The final sensation is of a fresh and dynamic wine, with a personal touch of Rubió de Sòls.
